Bussers at Popolo provide important service to our customers and invaluable support to our servers and bartenders. In addition to setting and clearing tables, bussers interact with our diners and are a vital part of the social fabric we create. Bussers occupy a tipped position and, to complement their standard wage, receive gratuity from the servers as a percentage of each servers’ overall tips. This percentage is enforced by management. While it’s undeniable that there is hierarchy in our staff structure, we value our bussers immensely and struggle to make their experience as fulfilling as possible.
