Popolo opened in May 2012 in the historic Windham Hotel building at 36 The Square in Bellows Falls, Vermont. The restaurant was founded by a group of 26 local shareholders who wanted Bellows Falls to have a full-service restaurant that reflected the character of the village.
The building overlooks the central square with leaded-glass windows, exposed brick, wooden booths, and a bar that anchors the dining room. Upstairs, the Windham Ballroom has hosted concerts, comedy shows, films, and community gatherings since Popolo's earliest days.
From the start, the partners wanted a restaurant that could work with local agriculture, serve an inclusive community, and still offer an affordable hamburger when that's what someone wanted. After months of fundraising, planning, and renovation, Popolo opened its doors.
Over the years Popolo has hosted nationally touring musicians, film screenings, holiday dinners, fundraisers for Main Street Arts, and off-site events like "The Great Outdoors" at Coolidge State Park. The past events archive tells much of that story.
Popolo remains independently owned by its shareholders. Many work in the restaurant; most do not. The goal has always been the same: good food, good people, and a place that belongs to the community.
